Dayton Comestibles Corn Whiskey Mustard is an “acidified” product, according to the food scientist. While this means nothing in terms of deliciousness, unfortunately for us, it means Kathleen will be going back to school. Acidified products are regulated by the Food and Drug Administration, so I am required to graduate from Better Processing Control School and get a canning license in order to process our product.
Depending on how fast I can study, this will probably add a few weeks to our timeline. Our other option is to contract manufacturing and canning out to a co-packer, but because of the small-batch nature of Dayton Comestibles Corn Whiskey Mustard, most manufacturers are too big for us–a “small batch” to some companies is 500 gallons!
